Our Stillworks are a combination of proven old world design and techniques and a little bit of new world technology. We’ve custom designed our equipment to meet our exacting requirements, however in staying true to our roots; it’s all still based on the time tested, proven vessels and processes used by our families for centuries. Our liquors are distilled in a “potstill” with an apple bottom/ gooseneck top whiskey hat. We have the ability to direct the vapors through 4-plate or 16 plate columns depending on the spirit we’re distilling. Fully fitted with dual condensers, dephlegmators and a little bit of modern technology, our system is designed to deliver consistency, repeatability and the very highest quality of spirits.
